VPS = Virtual Private Server.

What the hosting company does is buys a powerful server (multiple processors, lots of ram, tons of disk space) and then installs a virtual machine engine on it. Virtual machines are "computers" all within software with their own operating system running on the virtual computer. In a hosting environment, usually a VM will have a processor core, certain amount of RAM and disk dedicated to that VM. You then rent that VM from them. It’s not a whole server dedicated to you, but it is a dedicated virtual machine you are renting.

I’m just wondering if I need to do any sort of server maintanence to keep the thing running well or if Plesk will just take care of itself.

I mean … what exactly is it and why is it more then regular hosting?

a VPS is a virtual private server. It provides more resources than its little brother The plain old virtual server. I would explain in more detail, except there is a good article on wikipedia online:

"A virtual private server (also referred to as virtual dedicated server or virtual server, and abbreviated VPS or VDS) is a method of partitioning one physical server computer into multiple servers that each has the appearance and capabilities of running on its own dedicated machine. Each virtual server can run its own full-fledged operating system, and each server can be independently rebooted."

Don’t get caught using crummy hosting or your clients may decide they want to cut your head off with a katana sword.
